CHUBBUCK — Another new restaurant has opened in Chubbuck near the intersection of Interstate 86 and Yellowstone Avenue. Fuji, a Japanese bar and grill specializing in sushi and hibachi, opened June 20.
Chubbuck is the second location for Fuji, which opened first in Idaho Falls a little over a year ago. According to Heather Anderson, a server who has worked at both the Idaho Falls and new Chubbuck location, said there was a niche to fill in area.
“We were always busy at the Idaho Falls location,” said Anderson. “We expect the same here.”
Fuji is one of many restaurants that have opened in the area in the past few months and is one of only a few sit-down restaurants.
The menu at Fuji includes sushi, Thai food and hibachi.
“People think hibachi is really crazy,” said Anderson. “Really it’s just chicken or steak or salmon with rice and salad.”
While the hibachi food isn’t too far out of most peoples comfort zone, it comes with an added show. The chef comes out and cooks the food with a show that includes fire juggling and broccoli basketball.
Hibachi does have its own seating – however bar seating and normal restaurant seating is also available.
The restaurant is family friendly and is open both weekdays and weekends. Weekday hours are 11 a.m. to 2:30 p.m. and 4:30 p.m. to 9:30 p.m. On weekends they’re open all day from 11 a.m. to 10 p.m.
Fuji is located across the street from the Wal-Mart, between the new Black Bear Diner and Starbucks.
